With Japanese loose-leaf teas the brewing method is the key point. Temperature of water, amount of leaves and the steeping time are essential elements, with even the slightest change completely changing the taste.
With a history dating back nearly 300 years to the Edo period, Ippodo Tea is a tea company richly steeped in Japanese tradition.
Founded in 1717, Ihei Watanabe established the tea shop OMIYA at Teramachi Nijo. The shop quickly established a reputation for providing high quality tea. Patrons included such highly esteemed people as Prince Yamashina. It is from Prince Yamashina that Ippodo took on its present name. The prince desired Ippodo to forever preserve its tradition of high quality tea and taste. At his behest Omiya became Ippodo, literally meaning “preserve one.”
